No longer a quiet fishing village with nothing more than fish tacos. Prepare for a gourmand’s dream in Los Cabos, from elegant dining rooms to casual seafood cafes to simple taquerías. While fish tacos are still delicious here, Los Cabos covers a full spectrum of international fare including fine Italian, traditional Japanese, Chinese, nouvelle Mexican, and everything in between—all from standard to thrilling.

Naturally, seafood is the highlight. Fresh catches land on your plate, including dorado (mahi mahi), lenguado (halibut), cabrilla (sea bass), jurel (yellowtail), wahoo and marlin. Local lobster, shrimp and octopus are especially good. Fish grilled over a mesquite wood fire is the most indigenous seafood dish, but the most popular are fish tacos (tacos de pescado) that are deep-fried fillet in a corn tortilla, served with shredded cabbage, cilantro and salsa.

Landlubber meals are equally delicious. Not to be overlooked are beef and pork, commonly served marinated and grilled. Many restaurants import their steak, lamb, duck and quail from the state of Sonora, Mexico’s prime pastureland, and from the U.S.

Over the years, Los Cabos has drawn world-renowned chefs who’ve opened splashy restaurants, such as Suviche Restaurant by Jean-Georges Vongerichten, serving sushi and ceviche; Flora’s Field Kitchen, offering farm-to-table meals; and Tadd Chapman’s Don Sanchez, dishing out traditional Mexican fare with innovative flair.
